Advice: Fast, easy dinner options for less?
Everyone can relate to being pressed for a last minute meal. So what do you do in those situations?
Cara asks that in a post over on our Advice page:
The last couple nights, I've been really busy with schoolwork, so I find myself starving at 9 pm but without any idea what to eat for dinner. Before I would have just ordered in some food, but I've stopped eating out as much. What do you do when you find yourself in need of a fast, cheap meal at home?

I love sandwiches - mix it up, not just ham and cheese. I add lettuce, tomato, cucumber, just about anything. If you don't like mayo, replace it with mustard - I love the flavour of it. Or you can try peanut butter and banana, it's a personal favourite. :P the best part is that you can choose whatever type of bread you like. Or you can put all the ingredients into a tortilla and roll it up. If I'm feeling particularly lazy then cereal! I usually add frozen strawberries to Oatmeal Crisp - the vanilla or almond kind.
buy pita bread, pizza sauce, cheese and pepperoni and make mini pizzas! they are super cheap, easy, and delic.
I keep chicken breasts, pasta, and either a premade sauce or ingredients to make a quick sauce on hand (butter, herbs, etc). You can pre-cook the chicken breasts then freeze them if you want, or take the time to thaw then cook them. It's pretty simple for me, and doesn't take long.
As a college student myself, I understand your plight.
I love me a good salad. I throw all the vegetables I have in the fridge in, whatever protein I want if I have any, or heat up some canned beans and corn for protein. Cheap, uses vegetables up that otherwise might go bad, done.
I also like to just do pasta with whatever I have in the fridge. Barbeque sauce from when I did barbeque chicken? Yes. Sweet and sour sauce from when I ordered Chinese a month ago? Yes. And frozen vegetables are a lifesaver for it. You just heat them up and throw them in. Mmmhm.
-pasta (whatever's cheapest at the store, noodles are noodles), and a jar of tomato/alfredo sauce, plus little chunks of chicken or other meat, if you like. inexpensive and it makes a lot. plus, it's filling!
-melty sandwiches... use whatever bread you have on hand, whatever kind of meat (lunchmeat,even) and some cheese... melt in a toaster oven or a regular oven.
-make your own quick rice and stir-fry
-mini-pizzas... buy cheap bagels/english muffins, and put pizza sauce and cheese on top!
I find that making some food ahead is the most helpful, and the healthiest...a sandwich tray with a variety is handy --- a couple of salmon sandwiches, some roasted chicken, a few ham... then I can just reach in and grab a half-sandwich.
I also make big fruit trays with cut melon, some berries and grapes as well as a veggie tray with raw veggies cut up. It's nice to have veggies ready like that; I can throw a handful into sauces of soups since they're ready anyway.
Having it all handy means I have made the mess once, too --- not every day. I will also do bacon like that --- cook 3-5 whole packages, then freeze them ... then I can just grab a few pieces for anything I need. And again, the mess is made only once.

Tuna casserole: It's ready in under five minutes with three ingredients. A can of tuna in water (not drained), a can of cream of chicken (or cream of mushroom), and some potato chips (lays, ruffles). Heat in saucepan until boiling, stirring occasionally. Serve with more chips.
Fruit smoothies: 1-2 ripe bananas, frozen fruit (buy a variety bag at Costco), and juice of your choice. Put banana(s) in blender and add in frozen fruit. Depending on the thickness you want, pour in juice to be an inch shy of the frozen fruit level or an inch over. Mix throughly. Make a big batch and pour into Starbucks cups, so you've got breakfast the next morning.
